Whether you're standing at a trailhead camp stove or your kitchen counter before a big day, the ritual of a slow, intentional brew is part of the experience. What You'll Need
- A pour-over dripper (Chemex, V60, or similar)
- Paper or metal filter
- Freshly roasted Wild Earth Coffee, medium-fine grind
- Gooseneck kettle (ideal for control)
- Kitchen scale
- Timer
The Grind
Use a medium-fine grind — think sea salt texture. Too coarse and your brew will be weak and watery; too fine and it'll be bitter and slow to drain. If you're grinding whole beans, aim for consistency above all else.
The Ratio
We recommend 20g of coffee to 300ml (10–12 oz) of water — roughly a 1:15 ratio. This is your starting point; adjust to taste from here.
Step-by-Step Brew
- Heat your water to 195–205°F (just off the boil — about 30 seconds off the kettle).
- Rinse your filter with hot water to remove any papery taste and pre-warm the dripper. Discard the rinse water.
- Add your ground coffee and give the dripper a gentle shake to level the bed.
- Bloom: Pour 40g of water evenly over the grounds and wait 30 seconds. This releases CO₂ from fresh coffee and sets up an even extraction.
- Pour in stages: Slowly pour the remaining water in steady, circular motions from the center outward. Pour in 2–3 stages, keeping the water level consistent. Total brew time: 3–4 minutes.
- Enjoy immediately. Pour-over is best fresh — don't let it sit.
Troubleshooting Your Pour-Over
- Tastes bitter? Coarsen your grind or shorten brew time.
- Tastes weak or sour? Grind finer or slow your pour.
- Draining too fast? Your grind may be too coarse — tighten it up.
- Draining too slow? Grind is too fine — open it up a notch.
